The Garden

 

To enrich dishes with their fragrance, aromatic herbs must be eaten within only a few hours from picking.
The restaurant garden was passionately created by Angelo to ensure a constant supply of fresh "material".  No
"laboratory chemicals" are used for growing because, besides anything else, this would call for compliance with "safety
day" regulations that would reduce flavour and freshness.

If Angelo has time and any guests ask to visit the garden, he is only too pleased to show them around and provide
information and explanations.

At first the garden might appear untidy, but this is intentional.
It is an "old fashioned" garden requiring modern skills, and so: low walls to create microclimates and piles of wood to
create the right habitat for hedgehogs, toads, lizards and grass snakes, and artificial nests for the great tits, because all
these animals eat insects.
And again, consociations, associations of repellent plants or plants more resistant to parasites with other more delicate
or appetising herbs and compliance with plot rotation.

Apart from normal vegetable produce such as tomatoes and pumpkins, courgettes and cabbage, 40 types of aromatic
and salad flower plants are grown such as Balsam, Impatiens, Borage, Daisies, Violets, Roses and Nasturtium.

We cannot ensure the availability of all dishes, which are directly tied to what the land provides; seasonality, hailstorms,
etc., often affect such availability.
